i have a mix, knives i have found, liked and kept; a Henkels Santoku, a Chicago boning knife, a 10" Chicago Chefs and a small Chicago paring knife. the Chicagos are old ones, not the newer imported models, last one i bought was the 10" Chefs knife, 3bucks at the second hand store! have others, these are theones i use.
