Wood Grading is one of those arts ...
That is very forgiving - i.e., the grader either grades low or high - you always want the guys who grade low. Those look great because they have a very distinct grain pattern that shows up really well - but some guy called them "plain Jane" because the grain is fairly straight and parallel. Apparently that only gets you a "standard" or "fancy" grade.
Kinda like being a meteorologist. What other profession can you be worng over 80% of the time and not get fired. Lots of subjectivity.
