It's an either/or situation. You can have

either the orange Firefox tab or the menu bar. Yeah, I know. BUT, the options you have with the menu bar are available under the Firefox tab if you look around. They just aren't arranged very well. (for example, the switch to throw so you can see the menu bar is not very intuitive when compared to the options on the menu bar itself).

If you're concerned about finding your bookmarks, clearing your browsing history, etc, those options are all available through the Menu bar. A useful addition to the Firefox header (for lack of a better word in my mind right this second) is the bookmarks toolbar. You can insure it is showing by going to "View" then "Toolbars" and see that the "Bookmarks Toolbar" is checked. This gives you a chance to put frequently used bookmarks across the top of your Firefox window.
