Kitchen Knives

I'm looking for some good kitchen/cooking knives for my wife. I was going to look at Cabela's to see what was available, but thought I would see if any of you kind gentlemen had any opinions. We don't need a lot of knives, just 3 or 4 good ones that will cover cooking needs.

A couple good french knifes for chopping
a sharp boning knife and a couple paring blades
a bread knife & you'll be set for most chores.
We also have a Ginso type set that out performs the Cutco blades at every level.
Henchel are good and easily acquired at the mall stores.

This is a set a pro would be proud tom own. Times have changed, but these knives still work great.

the knife. Lots of the big stores sell Chinese-made junk that is branded with famous names.
Another good quality affordable line are the Victorinox-made Forschner.

i have a mix, knives i have found, liked and kept; a Henkels Santoku, a Chicago boning knife, a 10" Chicago Chefs and a small Chicago paring knife. the Chicagos are old ones, not the newer imported models, last one i bought was the 10" Chefs knife, 3bucks at the second hand store! have others, these are theones i use.

carbon steal knives are razor sharp! I built a short skinner out if a carver and it sliced through the welt and stiching of a sheath the first week I carried it. I still have my dad's Chicago cutlerly and Old Hickory Butcher knives.

I have a couple Dexter filet knives that I think would work - if I could ever catch a fish!
I ordered some Dexter's - didn't go for the very top of the line models. I think my wife will be happy with them.

I like two brands of knives and both are made right here in Massachusetts. One company, Lamson and Goodnow is made in Shelburne Falls Massachusetts. They have a couple of factory stores and I bought some of their products for the kitchen on line as well as when taking a day trip to the Mohawk Trail area.
The other company, Dexter-Russell, is made in Southbridge Massachusetts where they have a factory store that is open on Thursday evening and Saturday morning. They have factory seconds where you can get some nice knives for two to three dollars.

Here is a couple good american companies. Price wise they are middle of the road. You get what you pay for in knives jut like everything else. I have a few knives from both. Good knives!!! You probably could get by with a few paring knives(3' and 4"),boning knife, and 6-8" chef knife. As stated Henkels are very good depending on the grade you get. And get a good steel(or Ceramic) and touch up often. If you never let you knife get dull you will never really have to sharpen.

I've been using Chicago Cutlery for years. All my kitchen knives plus hunting knives. Easy to sharpen, hold a good edge for a reasonable time. I have butchered and boned out several Elk with then. Just keep a good stone handy and hit em a lick ever so often.
